... chitin , main constituent of the shells of arthropods. Chitin, a polysaccharide (see carbohydrate ) analogous in chemical structure to cellulose , consists of units of a glucose derivative ( N -acetyl- d -glucosamine) joined to form a long, unbranched chain.
